Ingredients
1 can mixed bean salad
1 can green lentils
2 cans chopped tomatoes
1 can baked beans
Handful of split lentils
2 large leeks
1 large onion
4 large carrots
2 parsnips
Green, red or yellow pepper
2 beef stock cubes
Salt & pepper
Mixed herbs

(I also add garlic and chilli, though these aren’t in the original recipe!)
Method
- Add all the ingredients into a large soup pot, with enough water to cover all the ingredients
- Bring to the boil, then simmer for approximately 30 minutes, or until vegetables are soft
- Either leave chunky, or blend for a smooth soup
It tastes lovely but just bear in mind need a large pot!

ReplyDeleteMade for the first time, it tasted really nice though first time felt it was a bit sweet but on 2nd day and now on third is a good soup would recommend it.

ReplyDeleteI have just made this soup for the second time, its so easy to do and hopefully it will shift a few extra lbs !! Its also very filling & tasty.... Its Syn free.
